YUM Recipe {Fresh Roasted Veggies}

Fresh Market Veggies

Hello everyone! What a beautiful day wandering the Pinecrest Gardens Green Market. It made me feel good all over to see how so much beautiful and healthy produce was right at our door step. Both Tiza and I had to control ourselves because it was all so tempting. I bought loads of veggies which I cooked as soon as I got home. I would like to share how I cooked them so that those of you who have little time to spend in the kitchen will also be able to enjoy these delights not only fresh on the day you buy them, but also on other days, just by storing them in a tight containers in the refrigerator. They keep perfectly for an entire week! You will find these good to accompany any meat or on their own as a healthy snack with crackers or bread.

Ingredients

  • 2 large sweet onions sliced in half and then sliced again thickly
  • 4 medium size carrots sliced in half
  • 4 medium sized beets sliced in nice round thick pieces
  • 4 large bell peppers sliced in 6 pieces length wise. If too large cut in half width wise first (you can use either green or red)
  • 3 sweet potatoes cut in large chunks
  • half of a large butternut squash also cut into large chunks
  • Olive oil
  • Salt and pepper

On a large sheet pan spread out like veggies. Salt all vegetables liberally then add a light shake of pepper. Lastly pour a very light stream of olive oil over all little by little making certain that all the veggies have their due amount.

Put in a 350 degree oven for about an hour. They will brown bringing out their natural, wonderful sweetness.  Take out and put in containers to store in the refrigerator. These are delicious to eat at room temperature but if you prefer, heat them very little, using the re-heat option on your microwave oven.

Class Treats {Welcome Fall}

I thought it would be nice to create a treat for the boy’s classrooms to celebrate the start of the fall season. I bought a couple of foam pumpkins at Walmart and made a couple of easy peasy class treats! Alex and Dani loved them and thought it was great that they could take treats for their classmates.

Supplies:

  • Foam pumpkins from Walmart
  • Dremel Rotary Tool (although mine is an old non-cordless version)
  • Small wooden skewers
  • Lollipops
  • Printed message
Instructions:
  • Drill holes (as many or as few as you’d like)
  • Insert lollipops
  • Print and attach your message to the skewers and all to the top of the pumpkin

Out and About {Pinecrest Farmer’s Market}

For the last couple of years I’ve gotten my veggies and fruits from a great organic co-op. For reasons too complicated to explain in this post, I opted out in June and have been very messy when it comes to our family’s fruit and veggie grocery store purchasing and home consumption. So, I decided to start a local Farmer’s Market adventure. I want to see what I can find, how much it’ll cost me, how much organic variety is offered, and how much is local.

My mom and I ventured out bright and early on Sunday and here is some of what we found:

The people from Coconut Grove Farms had an amazing variety and they were all very knowledgeable. About half there produce was organic but not all local.

We bought stuffed vegetarian grape leaves and baklava. I would go back for more of the grape leaves any day.

She was the sweetest girl and let us sample her dried fruits and leather (like store bought fruit roll-ups except no sugar or preservatives).Miami Fun Family - Pinecrest Farmer's MarketThe Healthy Break people were sooooo nice and offered these great spreads. The cool thing is that everything is olive oil based with no mayo added. Serious homemade flavor, perfect for a lunch, snack, appetizer or for a cocktail party. Did I stop eating long enough to photogragh EVERYTHING?

No. I had better things to do… taste test all free samples offered, talk to everyone, eat more, have smoothie, etc. I was very busy. However, I’ll mention a couple other vendors that caught my eye:Copperpot Jams & Jellies (loved the sweeet jalapeño flavor), Proper Sausages (we actually bought some for lunch and had an overcooking until way-too-charred incident. even then, delicious),and Kreative Gardenswith their spectacular succulents, money trees, and other exotic plants.

All in all…SUCCESS! I scored a good variety of fruits for snacks and lunchboxes, plenty of veggies for everyday meals, and even a money tree for my house! So, check your local markets and make time to visit one, ask questions, buy and cook something new for your family, and enjoy!

YUM Recipe {Lomo al Trapo}

Have I told you that my dad is Colombian? Well, he is. Thanks to him and my grandma (his mom) I love Colombian food. It is the epitome of home cooked comfort food to me. Assorted meats, a variety of root vegetables, hundreds of soups, and TONS of cilantro. Yum.

I am a foodie at heart (and soul) and constantly read recipe books, food magazines, talk to fellow foodies, and well, try to keep up to date and well informed. I am moderately familiar with Colombian cuisine yet was not aware of this life changing dish. Why? How? After I tried it for the first time I mentioned it to anyone who cared to listen and apparently I was among the few how did not know of it! Here is my story:

This summer good friends of ours invited us over for a pool day and a “Lomo al Trapo”. Literally translated: “Loin in rag”. Not so appetizing? Well, I beg you to reconsider… think beautiful lean beef loin, coarse sea salt, red wine, wrapped tightly in cheesecloth and tied with twine, charred directly on a blazing wood fire, cooked to tender perfection. Sound better? Just take a look:

Favorite {School} Pins ~ September

There are so many ideas out there that are big, small, easy, difficult, realistic and not possible within my lifetime! I come across many ideas that I would love to take on. Today I will be concentrating on ideas for school treats, decor, organization, etc.

  • Teacher Survey: I created a survey for my kids teachers so that I (and the other parents) can learn what they like. A teacher friend told me how she would much rather recieve a child’s handwritten note than the ton of chocolate boxes she has gotten in the past! A girl can only eat so much chocolate (even if they are the really goods ones!!!!)

  • Halloween Class Treats: This  would be sooo easy!

  • Organizing School Papers: I really need this now. A store bought filing box with 12 (or more for pre-k) files for yearly memory keeping. An easy way to store a collection of your child’s best artwork, school photos and awards. I may be a couple (or few) years late, but I have all their papers from past years. Now I just have to pull it out and organize!

6 Easy Steps to Photo Organization

One of my 2012 New Year’s resolutions was to keep up on my photo organization and not let it accumulate to the point where it’s so overwhelming that it is almost an impossibe task. So, here is what I am doing in order to keep my photo memories alive for many years to come.

  1. Create Folders on Computer: I created folders on my computer for each year (i.e. 2010, 2011, 2012) then I created sub-folders where I numbered and then named the twelve months of the year (i.e. 01 January, 02 February…12 December). The number before the month helps keep it in the right order, otherwise, the computer will usually organize alphabetically.
  2. Download Photos to Computer: I currently use Google Picasa (you can download for free here) for my general organization and simple editing. I purchased Adobe Lightroom recently and will be moving all my pics as soon as I learn how to use it! (More on that soon). I download all the photos from my camera to my computer IMMEDIATELY after I take them. I usually end up doing this at the end of the day and create a folder under the year, month taken and then the name of the event (i.e.2012>07 July>4th of July) – part because I am always terrified that I will loose my pictures off of the camera somehow, and part because this is one way I have found to keep my photos from accumulating to an insane number before organizing. Here is an example of what it looks like on my computer
  3. Sync and Backup: Once I download photos from my camera and upload into Picasa, I make sure to sync the forlder to Picasa Web Albums (you can sign up for free here). Again, I am paranoid about loosing my photos and this step gives me the peace of mind that they are backed-up at a second location. If you have an external drive it is smart to back-up your pictures there as well. Yup, you guessed, I back them up as well for a third “just in case”!
  4. Edit Quantity: At this point I look at my photos and try to heavily edit the quantity (I’m not so great at this because I seem to want to keep ALL the memories, but I’m learning!) I delete photos that are obviously bad (out of focus or where the subject is cut or cropped wrong) or that are simply too similar to another and keep only the best ones.
  5. Edit Remaining Photos: Next, I try to edit the remaining photos as much as I know how. I crop, adjust lighting and color, fix red eye and play with a few other tools (Picasa makes it very easy).
  6. Create Digital Photo Book: Now I have to tell you a bit more about my resolution. I haven’t printed more than a few photos in a very long time because: (1) I have no more space for pictures to be displayed and (2) it is overwhelming and boring to put them all into photo albums that other people will then deem boring to look at! So, what I decided to do was to create a “Year in Review” digital photo album I can easily share online with family and friends and that I can print at the end of the year. The book includes a bit of everything we have done during the year. Some occasions get a picture or two and other more important events get a page full or two or more! This system also allows me to get photos that were taken by other people (like my sister or off of friends phones) added to the book via internet or email when I add them as  ”contributors”. Easy peasy! This book must be added to at least once a month. DO NOT LET IT ACCUMULATE! There are several sites that allow you to create these digital-to-print books, here are a few I have used or know about:

If you keep this up you will have a beautiful photo book (you can even make copies for grandparents!) at the end of the year and you will be able to look back on it  for many years to come!

Celebrate {100 Days ’till Christmas!}

Can you believe it’s only 100 days ’till Christmas? Wow. Any day now and I’ll need to have my shopping done, the class treats planned and made, decorations pulled from storage and set out, Christmas tree up….Yikes!

Well, I guess in the mean time I’ll just waste a bit of my time and checkout what other, more organized and planned people have already done for the holidays! Here are my faves…

  • This would be cute either to have at home (like I need any more sweets with easy access!) or to send to the kid’s classroom for the teacher to handout as rewards.

  • I don’t really follow Advent traditions but since the kids would be able to see that there is SOMETHING there, I think the excitement would be inevitable and fun!

  • Even though the Miami weather is “cold” all of two or three days each winter, the school building is freezing all year!!!!!! This would be a nice treat for the teachers and would help keep them toasty warm!
